Ohhhh....yummy blackberries....There's so many ways we can enjoy these fruits. Blackberry muffins, blackberry juice, blackberry tea (infused with leaves), jam, pound cake with blackberries, yogurt, and the list goes on & on. Today I share my recipe for blackberry cobbler. It's been perfected over the years & it's definitely worth a try for berry lovers.
Here's what you'll need for the crust:
1 14oz. can of sweetened condensed milk
1 egg
1 stick of butter
1/3 cup regular milk
1/2 teaspoon salt
1 teaspoon baking powder
2 1/2 cups of flour
* This will give you enough dough for a 9 x 13 pan.
Mix all your ingredients together while your oven preheats to 350. In your cookware, use non-stick spray to coat. Place your blackberries in the pans & sprinkle sugar generously. Don't forget, the larger blackberries are much more sour than the mini wild ones. Take your dough and spread it over your fruit. There is no real method for this. I use my fingers by pulling it apart. (The dough should be too wet to roll.) Spray your dough with non-stick again & sprinkle some more sugar. Bake it in the oven until golden brown.
Now...this dessert should be served with whip cream! Absolutely delicious, it's a favorite in our home! (And hopefully it will be in yours too!) Keep in the fridge for up to a week, warm it in the microwave before eating. It makes a perfect addition to your morning coffee:)
